Sweet Potato Quesadillas, A Recipe

I want to share a delish recipe with you today!

Ingredients for Sweet Potato Quesdillas
O.M.G! These are awesome. 
Especially if you like a little sweet and spice together.  
And, they are super easy to make.

Here is what you need:

2-3 medium sweet potatoes
tortillas
shredded cheese (I prefer Colby Jack, but Cheddar will work just fine)
1 Avocado
1/2 an onion chopped
Olive oil or Vegetable oil for sautéing
Red Pepper Jelly for serving

Sweet Potatoes and Onions
Prepare your skillet and oil by heating to medium high while you peel and slice your sweet potatoes very thinly.
Start the potatoes sautéing while you slice and chop the onion, then add it when chopped.

While they cook, chop the avocado.

Make sure to turn the potatoes and onions so that they brown evenly. 
When the potatoes are soft and are just starting to brown evenly, they are done.

Remove them from the heat and transfer the mixture to a dish lined with paper towels to drain.

Use a paper towel to remove excess oil from the pan. Lower the heat to medium.

Lay a tortilla on the pan and on one half, layer the potato mixture, chopped avocado, and shredded cheese.
Fold the other half of the tortilla over to close. 

Flip to brown on both sides.

Serve with a salad and it will make a great summer supper!

Don't forget the Red Pepper Jelly! It is the perfect addition to this delicious meal.

20 Minute Crafting with Washi

Hi, Simple Dream & Create Readers! I am Amy and I'm really excited to be guest posting here for Stephanie.  I "met" her when I shamelessly emailed her and asked for blogging tips a couple of months ago. Then she was gracious enough to participate in a blog series that ran over at my blog, Trip Worth Taking.  She shared her favorite crafting tool and cleared up a little confusion for me in the process! 

I love to craft and sometimes you just need a quick crafting fix, you know? At least, I do.  
Maybe I'm the only one with the problem.  If you're not in the same boat then just talk amongst yourselves for a minute while I share with all the craft addicts.


My kids think I'm crazy sometimes because a thought will jump into my head and I have to act on it.  Sometimes those little crafting explosions work out and sometimes they don't, but I give it a try anyway. 

I have recently fallen in love with Washi Tape. Yes, I know, I'm late to the party. (Hey, but I DID show up!) And, want to put it on everything. I have been able to restrain myself mostly, but I did decide that Washi would be the perfect answer for a little problem.

Isn't it sad.  I know it happens to us all.  
We use and abuse our phone cable and expect them to last forever.

I was going to just put some tape around the top and then I had a brain surge. Washi!

Before I could Washi my little heart happy, I had to get the outer rubber casing pulled down to the ends evenly.  To do that I simply held on to one end and ran my fingers down the cord.  It easily pulled back into place.

Then I set to work. No real technique involved here.  I started at one end with the cord running down the length of the strip of tape:

I just closed the tape around the cable. Easy Peasy.  
At the ends where the cord meets the USB and phone connections, I wrapped around the cord.

I did this all the way up to the connector.

Now my cord should last a while longer....and, it's pretty.

Here's an itsy bitsy hint:
If you find that your tape is coming loose, use a little clear nail polish to stick it down. Booyah!

Oklahoma Tragedy

My thoughts and prayers are with those affected by the severe weather in and around Moore, OK.  
I pray that they will continue to find more survivors and bring happy news to those who are still searching.

Our area is currently under severe weather watch and will turn into tornado warnings later today.  
Everyone be careful and take safety precautions.

Learning Lessons

Yes, there is a lot of testosterone running rampant in my world.  And, I like it that way. 

I had lots of people ask me after my youngest was born if we were going to keep trying for a girl.

My answer was emphatically, "NO!"

Don't get me wrong.  I think little girls are so cute and you can dress them up and take them to dance lessons. But, I have always loved little boys. 

Geez. I love my boys. 

I have a soon to be high school freshman who is so good at so many things.  He loves to take things apart and fix them and put them back together.  He loves learning about how things run. I fully expect him to be some sort of engineer.  So, obviously he is very smart. And good lookin', too!

Automate blog posts to Twitter and your Facebook Fan Page
Automate your Instagram photos to Evernote, Facebook, or email.
Set your lights to come on at home when the sunsets or if your favorite team wins their big game.
Want to save a link to a favorite Youtube video to Dropbox? Automate it.

Simple Campfire Desserts


I am on a pretty strict diet. But, my family isn't.
And, we love dessert.
Really.

It's the whole reason for the rest of the meal, right?

I've been collecting ideas for fun summer desserts that the kids can help make.

We love to cook as a family, and making these desserts will be even better.

Cookouts are always fun, and the perfect way to finish it off will be with these super simple and yummy Campfire Cones

DietBet Update

Well, folks, I did it!

Dietbet Update

I lost 4% of my bodyweight and won a whopping $41!!
I have never been so excited over $41 in my life.  I worked hard for it! And, more importantly, I stuck with it. I have never been one for sticking to a diet or exercise plan for long.
For 28 days, I ate healthy and exercised at least 4 times a week.
That's a big deal.

Embarrassing Things I Don't Do Anymore...or, Trendy Things We All Did in the 80's

Times change...thank goodness!

As a wonderful result, there are a lot of things that I don't do anymore.  
I'm sure you have things that you don't do anymore, also. (At least, I hope you do!)

There are fads that come and go...and, absolutely should go and never, ever return.

I was born in the amazing decade of the 70's (that was sarcasm peeps), but I am a child of the 80's.
Whew! Am I glad those days are gone!

I was a stick with knees, big hair, blue eye shadow, and shoulder pads.
It was awesome!

What could be better for a quick change in any room?
